Here's a quick guide on how to unlock new weapons in Minecraft Dungeons II.
Getting new weapons is mostly something that happens while you're playing normally. You don't need to spend hours trying to unlock every weapon right away. Just keep doing missions, look through the stuff you pick up, and swap weapons when you find something that suits you better.
Play Through Missions
The easiest thing to do is simply keep playing missions. You'll pick up weapons from enemies and other rewards as you go, so there's no need to stop your progress just to look for new ones.
Early on, I'd just use whatever weapon feels decent. You're going to replace a lot of your gear anyway, so there's not much point worrying about having the perfect weapon.
Check Your Loot
Don't just grab everything and forget about it. Have a quick look at the weapons you pick up before you sell them.
Sometimes a weapon with lower numbers can still be a better choice because of its bonuses. If something looks interesting, give it a try before deciding it's junk.

Try Different Areas
If you're after different weapons, play some areas you haven't been running over and over. There's not much reason to keep doing the same mission if you're bored with the gear you're getting.
Trying different areas also gives you a chance to find something that suits you better. You might end up liking a weapon you wouldn't have picked otherwise.
Don't Sell Everything Right Away
Your inventory will fill up eventually, and you're going to have plenty of weapons you don't want. That's fine. Just don't sell something immediately without looking at it first.
If you're unsure about a weapon, keep it for a little while. Use it in a couple of fights and see how it feels. If you don't like it, then sell it and move on.
Upgrade Weapons You Like
When you finally find a weapon you really enjoy using, that's when I'd start spending resources on it. There's not much point upgrading every new weapon when you might replace it five minutes later.
I'd rather have one properly upgraded weapon that I know I like than waste resources upgrading a bunch of stuff I'm probably going to throw away.

Keep playing missions, check your new weapons before selling them, and try different areas when you want to find something new.
FAQ
Q. Do I need to unlock each weapon somehow?
A. Nah, just keep playing. New weapons will turn up as you go through missions and pick up loot.
Q. Should I keep a weapon with worse stats?
A. If you like the way it plays or its bonuses are useful, yeah. I'd test it first instead of judging it just from the numbers.
Q. When should I spend resources on a weapon?
A. I'd wait until you've used it enough to know you actually like it. Otherwise, you might upgrade it and replace it almost straight away.
