Aging multiplies the price of your Cheese and Goat Cheese by up to two. You need the Cellar and Casks first. This guide covers how to unlock both, how the three quality stages work, and how to stop aging early.
Unlocking the Cellar and Casks in Stardew Valley
Upgrade your house all the way at the Carpenter's Shop. The last upgrade adds the Cellar, where all aging happens. When the Cellar opens, you also get the recipe for the Cask. Each one costs 20 Wood and 1 Hardwood.

The Cellar starts with 33 Casks, and you can fit up to 189. If you want to age a lot at once, craft more.
How Aging Works
Place a product such as Cheese, Goat Cheese, Wine, or Beer in a Cask. The Cask has to be in the Cellar. Once you place the item, the Cask starts to bounce while it works. The product moves through three quality stages.
For Cheese, 3 days brings Silver quality, which sells for 1.25 times the base price. After 4 more days, 7 in total, it becomes Gold quality at 1.5 times the base price. After 7 more days, 14 in total, it becomes Iridium quality and sells for double the base price.

Goat Cheese follows the same timeline. It starts out worth more than Cheese, so each stage pays more too. Wine, by comparison, needs two seasons to reach Iridium, so Cheese is much quicker.
Stopping the Process Early
You can stop aging at any point. Hit the Cask with an Axe, and you get the product back at the quality it reached. A Hoe or Pickaxe works too. If the product reached Silver, you get a Silver one back.
Still, it is better to let the cheese age the full 14 days. Cheese doesn't take long, and with many Casks you make a decent profit in Stardew Valley.

What to Do Next
Craft more Casks and fill every one with Cheese or Goat Cheese. Come back after 3, 7, and 14 days to collect, and refill each Cask right away. Aim for Iridium quality on every batch.
