Here's how to hand the shopping to a manager and earn money while you're away in Nivalis Nights.
Ramen Noir in Nivalis Nights can turn a profit without you once a manager takes over the buying. Here you'll set the restaurant up for that and then test whether it pays. Settings reflect the game through Update 6.
Unlock the Manager at Venue Level 3
The manager role opens once Ramen Noir reaches venue level 3. From that point on, the manager buys ingredients, and you stop shopping for the kitchen.
Before you hand over, remove dishes you don't plan to keep, and move stock you won't use out of the venue with Transfer to Inventory. Ingredients left in storage can spoil while the manager buys more, so you end up paying twice for one day's food.

Pick a Supply Target and Budget in Nivalis Nights
Since Update #4, the venue overview in Nivalis Nights lets you set a Supply Target and a Daily Restock Budget for each venue.
The target decides how much of each ingredient the manager keeps. Lean holds 2, Normal holds 5 and is the default, and Extra holds 10. Recent Sales bases the amount on meals sold over the last 4 in-game hours, with 2 as the floor.
This setup was built around a buffer of about 10 servings, and Extra comes closest to that. With only two dishes on the menu, the manager still has few ingredients to track.

Leave at least 1,000 lims in the restaurant account for the manager to spend. Set the budget to cover a day of ingredients, and if the restock reminder keeps appearing, raise it.
Keep Use Greenhouse Stock switched off. Update #5 added it so managers draw from your greenhouse first, and this setup buys everything from vendors instead.
Keep the Menu to Two Dishes
Put Chicken Noodle Soup and Beer on the menu in the Menu tab and stop there. The soup takes Chicken, Ramen Noodles and Onions, while Beer needs one ingredient of its own plus the drink machine.
Each dish you add is one more stock the manager keeps up, whether customers order it or not. A dish that sells twice a week still ties up ingredients while the soup runs out.

Ramen Noir starts with two menu slots, enough for this pair from the first day. If Beer isn't unlocked yet, it reportedly comes from talking to other restaurant owners in Meridian Market during the opening days.
Set Up Tables and Kitchen Equipment
The restaurant comes with two tables. Add two more for four tables and eight seats, and leave stools out.
Set a Tablet Menu on every table, and customers place their own orders. That leaves waiters two jobs per table: bring the food and clear up.
Keep the four tables together near the counter and kitchen. Waiters spend paid time on every walk across the room.
For the kitchen, two Food Processors and one drink machine cover both dishes. Two cooks can handle that load, and adding more equipment only means hiring more people to run it.

Staff Ramen Noir in Nivalis Nights
Seven employees run this setup. Check that the Workers Limit on the Staff tab has room for them.
Everyone except the manager clocks in at 9:00 a.m. and leaves at 10:00 p.m. The manager comes in an hour later and goes home at 8:00 p.m.
Turn the chef role on and the waiter role off for both cooks. The three waiters keep only the waiter role, since tables pile up orders when fewer people cover them. A cleaner with only cleaning switched on keeps the cooks and waiters on their own work.
Plan for a morning rush. Since a balancing patch after Update 6, customers get hungry every 6 in-game hours, and many of them want food soon after opening.

Keep the Venue Working Hours at 09–22 to match the shifts. Hours before 9:00 a.m. or past 10:00 p.m. would only add wages.
When you hire, lower each wage step by step and stop before their happiness drops below the threshold. If a worker asks for a raise down the line, replace them instead. For example, wages here ran from 3.00 to 7.00 lims an hour.
Leave and Check the Results
With everything in place, leave the restaurant and spend the day elsewhere. Don't restock by hand, even when the cupboards run low.
Since Update 6, venues in Nivalis Nights keep running while you sleep, so the evening still plays out if you go to bed before curfew.

Before you change anything, read the End of Day screen. It lists each venue's Final Venue Balance, and a figure with a plus sign means the restaurant made money. In one run, a day ended at +806.35 lims from 70 customers.
Once the rating reaches four stars, try pricing both items about 2 lims under the maximum. During a rush, drop the price by 1 if you see seats with no one in them. If the room fills every rush, leave the price where it is.
At a 4.6-star rating, the soup sold for 40.00 and the beer for 16.00. Yours may differ with your rating and district.
Mistakes That Break Automation in Nivalis Nights
Keep the menu at two dishes, even after the rating climbs. A third one gives the manager more to track and more stock that can go bad.

Hold off on the debt. Ramen Noir reportedly carries about 50,000 lims of it, and paying it down too soon drains the money the manager shops with. Wait until the restaurant turns a profit day after day.
What to Do Next
Run one day without stepping in, then read the End of Day screen. Change one thing at a time, starting with price. Once profit holds for several days, start paying the debt down in steps. When Ramen Noir earns money in Nivalis Nights without you, the Business Empire quest leads to a second venue.
Give the manager a two-dish menu and a budget to shop with, then leave Ramen Noir alone and judge it by the next day's balance.
FAQ
Q. When do managers unlock in Nivalis Nights?
A. Once Ramen Noir hits venue level 3, the manager role opens up.

A. This setup keeps at least 1,000 lims in the restaurant account. When the restock reminder won't go away, try raising the daily budget.
Q. Should I pay off the debt right away in Nivalis Nights?
A. Hold off until the restaurant makes money most days, because the manager buys ingredients from that same account.
