A custom recipe lets you swap ingredients and cooking methods on a dish. Those swaps change its calories and how much Workers, Hipsters, and the Elite like it. This guide covers where to find the screen, what to change, and how to price the result in Nivalis Nights.
Find Customizable Dishes in Nivalis Nights
Open your venue's management screen and go to the Menu tab. The left side lists your Known Recipes, and the right side lists what is on your menu. Both lists hold dishes you can customize.
In Nivalis Nights, select a dish and look at its required ingredients. A small cog on an ingredient icon means you can change it. On the Cheese Burger, the beef and the cheese have a cog, and the bun doesn't.

Press Customize Recipe to open the editing screen. For example, Accordion Potatoes, Beer, and the Cheese Burger have this button, while Chicken Noodle Soup and Sailor Soup don't. The list shows no marker for it, so open dishes one by one.
Check the top of the Menu tab too. It shows whether people in the district are happy with the menu, and it lists the local exclusivity preference. For example, one venue reads Moderate (2/5).
Change Ingredients and Read the Preferences
In Recipe Customization, the left panel lists each main ingredient with its appliance. Click one, and the Ingredients and Appliances panels fill with options. Each ingredient shows its calorie and exclusivity bars. Some ingredients are locked. Click the Burger Bun, and both panels stay empty, so a toasted bun isn't possible.
The Recipe Summary on the right updates as you pick. Watch Calories and Exclusivity, and the three faces under Preferences for Workers, Hipsters, and Elite. A green face means that group likes the dish. An up arrow appears next to Exclusivity when a change raises it.

Meat swaps change the numbers. Lamb has more calories than Beef while exclusivity stays the same, and chicken lowers exclusivity, which cuts what you can charge. Stay with beef if price is your goal.
Cheese gives the larger gain. Blue Cheese in place of Cheese raised exclusivity, and all three groups turned green. Those were the only two cheese options at the start, and more may unlock as you play, though that isn't confirmed.
Pick Appliances to Raise Exclusivity in Nivalis Nights
Each main ingredient in Nivalis Nights takes its own appliance. Roasted adds 10% to exclusivity, and Grilled adds 20%. Cooked cuts calories by 10% and leaves exclusivity alone.
That's why the exclusivity bar doesn't move when you switch the beef from Grilled to Cooked. You give up the exclusivity bonus for a lower-calorie burger. Keep Grilled if exclusivity is your goal. You can grill the cheese as well. Pick the option, and the bars update before you save.

Save the Recipe and Set the Price in Nivalis Nights
Press Save when the bars look right, or Cancel to drop the change. The menu entry then shows the new ingredient. You can make these changes while the venue is closed.
Then raise the price with the plus and minus buttons beside it on the menu entry. A dish that every group likes and that has high exclusivity can sell for more. For example, a Cheese Burger with Blue Cheese can sit at 48, and yours may differ.
Customize Desserts Like Brownies
The same screen works for desserts in Nivalis Nights. Brownie sits in Known Recipes with its own Customize Recipe and Add to Menu buttons, and you can edit it before it's on your menu. To serve it, you still need a blender.
The brownie's Vanilla ingredient has a cog. For example, swapping Vanilla for curry pushed exclusivity to the top of the scale, and pepper raised it less. Test each option, since the results can surprise you.
