Here's a quick guide on how to evade missiles in Ace Combat 8: Wings of Theve.
That warning sound gets annoying pretty quickly when you're in the middle of a dogfight. You're lining up a shot, trying to finish off an enemy, and suddenly you've got a missile coming straight at you. In Ace Combat 8: Wings of Theve, you can't just keep flying in the same direction and hope for the best, so here's what I'd do when an enemy gets a lock on you.
Turn Hard Instead of Flying Straight
When you hear the missile warning, pull into a sharp turn instead of continuing toward your target. Don't turn for half a second and immediately straighten out, either, since you'll give the missile an easy path to follow. Keep changing your direction until you've got some distance between you and the threat.
You don't have to abandon the fight every time a missile comes your way. Once you've shaken it off, you can turn back toward your target and continue the attack, provided another missile isn't already on its way.

Use Your Speed to Get Out of Trouble
If you've got room to accelerate, use it. Building up speed while changing direction can help you get away from a missile, especially when you're already moving quickly and need to put some distance between yourself and the enemy.
Just don't rely on speed alone. If you keep flying in a straight line, the missile may still catch up with you, so combine acceleration with a sharp turn rather than treating one as a replacement for the other.
Change Altitude When You Need To
Sometimes turning left or right isn't enough, especially when you're stuck in a close fight with several enemy aircraft. Try climbing or diving while turning to change your flight path and make it harder for the missile to follow you.

Be careful if you're flying low, though. Diving to avoid a missile isn't much help if you end up slamming into the ground while trying to escape. Leave yourself enough room to pull up before making a sudden change in altitude.
FAQ
Q. What should I do when the missile warning starts beeping?
A. Turn sharply and change your flight path instead of continuing to fly straight toward your target.
Q. Is accelerating enough to dodge a missile?
A. Not always. Combine acceleration with sharp turns to make it harder for the missile to stay on your aircraft.
Q. Should I stop attacking when a missile is coming?
A. If you're about to get hit, break away first and return to attacking once you've dealt with the immediate threat.
