Here's a quick guide on how to get and upgrade the best armor in The Legend of Zelda: Breath of the Wild.
There are plenty of armor sets in Breath of the Wild, and which ones are worth getting really depends on what you're doing. Some are good for fighting, while others are much more useful for climbing, travelling, or dealing with cold areas.
If you want a few sets that will stay useful for a good part of the game, I'd start with these three.
Get the Ancient Armor
If you're dealing with Guardians, this set is great. Once you've got the lab running, you can purchase the Ancient Armor from the Akkala Ancient Tech Lab. Every piece gives you Guardian Resist Up, and wearing all three pieces after upgrading them to at least two stars gives you Ancient Proficiency, which increases the damage of Ancient and Guardian weapons.
It's especially useful once you're comfortable using Ancient or Guardian weapons. The extra protection against Guardian attacks also makes it a good set to keep around.
Get the Climbing Gear
You'll get plenty of use out of this while exploring. The Climbing Gear makes you climb faster, so getting up cliffs and mountains is much less of a chore. The three pieces are hidden in different Shrines around Hyrule.
If you spend a lot of time exploring, I'd try to get this set fairly early. Being able to climb faster can save you a surprising amount of time.

Get the Barbarian Armor
Use this when you want to deal more damage. The Barbarian Armor gives you an attack boost, and upgrading the full set twice unlocks the Charged Attack Stamina Up set bonus.
The three pieces are hidden inside the three labyrinths around Hyrule. Getting the whole set takes some work, but it's worth getting if you want something that's useful in combat.
Upgrade Your Armor
Don't forget about the Great Fairies. You can upgrade armor at Great Fairy Fountains as long as you have the materials that piece needs. Depending on the armor, you might need monster parts, plants, gems, or other items.
Upgrading armor increases its defense, so a set that doesn't seem very impressive at first can become much more useful after a few upgrades.
Find Great Fairy Fountains
You'll need more than one if you want to fully upgrade your gear. There are four Great Fairy Fountains around Hyrule, and unlocking more of them allows you to upgrade your armor further. You'll also have to pay a fee to unlock each Fairy, so make sure you have some Rupees with you.
If you're planning to upgrade more than one set, it's a good idea to find the Fountains while you're exploring instead of leaving them until the end.

Pick armor that fits what you're doing, and don't waste materials upgrading pieces you never use.

Q. Can I mix and match armor from different sets?
A. Yep, you can wear whatever pieces you want together. Just keep in mind that you won't get a set bonus unless you're wearing the pieces needed for it.
Q. Do full armor sets give you any extra bonuses?
A. Some of them do. Certain sets get a special bonus once you've upgraded all three pieces enough, but plenty of sets don't have one.
Q. Is armor better than using a shield?
A. They aren't really doing the same thing. Armor helps reduce the damage you take, while a shield lets you block attacks.
